Ingredients
Spring Roll Wrapper
Saba Bananas
Canned Jackfruit
White and Black Sesame Seeds
White and Brown Sugar
Ube Halaya (Purple Yam Jam)
Neutral Cooking Oil
Preparation
Start by slicing your bananas and jackfruit lengthwise. Cut the bananas in half if they are too long.
Coat your sliced banana in brown sugar, and place it in the middle of one spring roll wrapper.
Add a couple of jackfruit slices to the banana on the spring roll. (Optional: Add ube halaya or any filling of your choice!)
Begin by folding over the bottom half of the spring roll wrapper away from you, and over the turon filling.
Next, fold over each side of the spring roll wrapper towards the center. Then roll up the turon tightly.
Seal the edge with a cornstarch slurry.
Add a light coat of white sugar around the wrapped turon to caramelize during cooking.
Cooking Method:
In a deep pan, heat oil over medium-high heat. Add enough oil until it reaches half the height of the turon.
To test the heat of the oil, take a wooden spoon and dip it into the pan. Bubbles around the spoon indicate that your oil is hot enough!
Carefully lay the turon away from you into the pan.
Fry until crispy crunchy-golden munchie, turning them occasionally to ensure even cooking.
Remove from the turon from the oil, and immediately roll in white and black sesame seeds.
Drain excess oil on paper towels or stand the turon upright on a wire rack.
Allow your turon to cool slightly before serving!
Notes:
Make sure the oil is hot enough before adding the turon to prevent them from absorbing too much oil and becoming greasy.
Use ripe bananas because they’re tastier, and unripe bananas will not stick to the dark brown sugar coating.
Pre-peel the spring roll wrappers and keep them under a damp cloth to prevent them from drying out (spring roll wrapper 101).
